Mapillai Samba Laddu (Bridegroom's Rice Laddu)

• 1 cup Mapillai Samba rice
• 1 cup grated jaggery
• 1/4 cup ghee
• 1/4 cup chopped nuts (cashews, almonds, etc.)
• 1/4 cup grated coconut (optional)
• 1/2 teaspoon cardamom powder
  

1. Roast the Rice: Dry roast the Mapillai Samba rice in a pan on medium heat until it turns aromatic and slightly golden. Let it cool and then grind it into a fine powder.
2. Roast the Nuts: In the same pan, add a tablespoon of ghee and roast the chopped nuts until they turn golden brown. Set aside.
3. Prepare Jaggery Syrup: In a separate pan, melt the jaggery with a few tablespoons of water on low heat until it dissolves completely. Strain to remove any impurities.
4. Mix Ingredients: In a large mixing bowl, combine the powdered Mapillai Samba rice, roasted nuts, grated coconut (if using), and cardamom powder.
5. Combine with Jaggery Syrup: Pour the hot jaggery syrup into the dry ingredients and mix well.
6. Shape Laddus: Add the remaining ghee and mix until the mixture is well combined and slightly warm. Grease your palms with a little ghee and shape the mixture into small laddus.
7. Cool and Store: Let the laddus cool completely and store them in an airtight container.
