Homemade Mutton Masala Powder

Ingredients:

  • 2 tablespoons coriander seeds
  • 1 tablespoon cumin seeds
  • 1 tablespoon black peppercorns
  • 1 tablespoon fennel seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon fenugreek seeds
  • 6-8 dried red chilies (adjust to taste)
  • 1 teaspoon turmeric powder
  • 1 tablespoon paprika or Kashmiri chili powder (for color)
  • 1 teaspoon dried fenugreek leaves (Kasuri methi)
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon ginger powder (optional)
  • 1 teaspoon cinnamon powder (optional)
  • 2-3 cloves (optional)
  • 1-2 bay leaves (optional)

Instructions:

Dry Roast Spices:

    • Heat a dry skillet over medium heat. Add the coriander seeds, cumin seeds, black peppercorns, fennel seeds, mustard seeds, and fenugreek seeds.
    • Roast the spices, stirring frequently, until they become fragrant and slightly darker. This should take about 3-4 minutes.

Add Dried Chilies:

    • Add the dried red chilies to the skillet and continue roasting for another 1-2 minutes. Be cautious not to burn the spices.

Cool and Grind:

    • Remove the roasted spices from the skillet and let them cool completely.
    • Once cooled, grind the spices into a fine powder using a spice grinder or coffee grinder.

Mix in Additional Spices:

    • Add the turmeric powder, paprika or Kashmiri chili powder, dried fenugreek leaves, garlic powder, ginger powder, cinnamon powder, cloves, and bay leaves to the ground spice mix.
    • Blend everything together until well combined.

Store:

    • Transfer the mutton masala powder to an airtight container. Store it in a cool, dark place for up to 3-6 months for the best flavor.

Using Mutton Masala Powder for Curry

Basic Mutton Curry Recipe:

Ingredients:

  • 1 kg mutton, cut into pieces
  • 2 large onions, finely sliced
  • 2 large tomatoes, finely chopped
  • 2 tablespoons homemade mutton masala powder
  • 1 cup yogurt
  • 2 tablespoons ginger-garlic paste
  • 2 tablespoons oil or ghee
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

Heat Oil: In a large pot or pressure cooker, heat the oil or ghee over medium heat. Add the sliced onions and cook until they are golden brown.

Add Ginger-Garlic Paste: Add the ginger-garlic paste and sauté for a few minutes until the raw smell disappears.

Cook Tomatoes: Add the chopped tomatoes and cook until they become soft and oil starts to separate.

Add Spices: Stir in the mutton masala powder and cook for a couple of minutes to allow the spices to blend.

Add Mutton: Add the mutton pieces and salt. Cook for about 5-7 minutes, stirring occasionally, until the mutton is browned on all sides.

Add Yogurt: Stir in the yogurt and cook for a few minutes.

Add Water: Add enough water to cover the mutton. If using a pressure cooker, cover and cook for about 15-20 minutes after the first whistle. If using a pot, cover and cook for about 1-1.5 hours or until the mutton is tender.

Garnish and Serve: Garnish with fresh coriander leaves and serve hot with rice or naan.
