Ragi Murukku, also known as Murukku Snack or Kezhvaragu Murukku, is a popular savory snack in South India made from ragi (finger millet) flour. It’s a crunchy, spicy treat often enjoyed during festivals or as an accompaniment to tea. The ragi flour gives it a unique flavor and adds a nutritious twist compared to traditional murukku made with rice flour.

Here’s a basic recipe for making Ragi Murukku:

Ingredients:

  • 1 cup ragi flour (finger millet flour)
  • 1 cup rice flour
  • 1/4 cup urad dal flour (optional)
  • 1/4 cup sesame seeds
  • 1-2 tablespoons chili powder (adjust to taste)
  • 1/2 teaspoon ajwain (carom seeds)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • Salt to taste
  • 2 tablespoons softened butter or ghee
  • Water as needed
  • Oil for deep frying

Instructions:

Prepare the Dough:

  • In a large mixing bowl, combine the ragi flour, rice flour, and urad dal flour (if using).
  • Add the sesame seeds, chili powder, ajwain, turmeric powder, cumin seeds, and salt. Mix well.
  • Add the softened butter or ghee and mix until it resembles coarse crumbs.
  • Gradually add water little by little and knead to form a soft, smooth dough.

Shape the Murukku:

  • Heat oil in a deep frying pan or kadai over medium heat.
  • Use a murukku maker or a piping bag fitted with a star-shaped nozzle. Fill it with the dough.
  • Press the dough out into the hot oil in circular patterns or in a spiral shape. (You can also form shapes on a piece of parchment paper and then gently slide them into the oil.)

Fry the Murukku:

  • Fry the murukku in batches, making sure not to overcrowd the pan. Fry until they are golden brown and crispy, which should take about 2-3 minutes per batch.
  • Remove with a slotted spoon and drain on paper towels to remove excess oil.

Cool and Store:

  • Allow the murukku to cool completely before storing them in an airtight container.
  • They can be stored for several weeks.
